Egg Wrapped Dumplings
Possibly the famous Jiaozi needs no introduction; and how about Egg Wrapped Dumplings? It is a popular traditional stuffed food in Yangshuo. Instead of being wrapped in doug, the fillings are wrapped in fried egg.
These egg-wrapped dumplings are like mini omelets with some stuffing. If you travel to Yangshuo, they can be served as a delicious local treat. Also there are chances to try your hand at this dish in a cooking class; and you will be able to make it again back home.
First pour some oil onto the heated wok, and add a tablespoon of beaten egg to get a small egg omelette. Then, place some mixture of minced pork and spring onions in middle, and fold egg over filling to form a crescent shape. This dumpling can be pused up a side of wok to cook for a further 15-20 seconds until golden brown on both sides.
You can make 3-4 dumplings at a time, and keep repeating this process until all of the mixture is used. Once all dumplings are made, put them back in wok. Add a couple tablespoons of water, cover with a wok lid, and steam dumplings. They will be finally well-cooked after 3 or 4 minutes.
